Mushrooms Are Nutritious?


I, like a lot of people, thought that mushrooms had zero nutritional value. I've never been a huge fan of mushrooms, so eating them was never a priority.

Well, it turns out that I was wrong and that I should start paying more attention to mushrooms.

HEART HEALTHY
Mushrooms may be the top source of ergothioneine. And in a lab study, the substance reigned supreme in inhibiting adhesion molecules -- the ones responsible for helping plaque-forming cells latch onto blood vessel walls.... the amount in white button mushrooms is 4 to 12 times higher (than other foods), and meaty portobello mushrooms have even more.

CANCER FIGHTER
White button mushrooms may also have cancer-fighting powers. In animal studies, powdered white mushrooms ramped up production of natural killer cells that help protect against tumors.

WOW!

I read the abstract of the study and unfortunately, I could not tell if the mushrooms were cooked or eaten raw. I'm going to assume they were cooked as RealAge connected some cooked mushroom recipes to this study. That is a dangerous assumption on my part, yet I also suspect that the study would have called out the differences between cooked and uncooked mushrooms.
