5 pounds Korean-style beef short ribs (3/4 inch thick)
Kosher salt
Fresh ground black pepper
1/4 cup whole garlic cloves
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped carrot
1 bottle stout beer
2 sprigs fresh thyme
1/4 bunch parsley
1/2 sprig rosemary
1 1/4 gallons beef stock
